Ingredients
Scale
- 1 bundle of arugula
- 1 bundle of romaine lettuce, chopped
- ¼ cup organic strawberries, sliced
- ¼ cup organic blueberries
- ¼ cup organic blackberries
- ¼ cup chickpeas
- 1 avocado, pitted and diced
- ¼ cup raw walnuts
- ¼ cup pumpkin seeds
- 2 tablespoons hemp seeds
Poppy Seed Dressing
- 3 tablespoons cashew butter
- 1 lemon, juiced
- ½ teaspoon apple cider vinegar
- 1 teaspoon poppy seeds
- 2-3teaspoons water, to loosen dressing
- 1 tablespoon raw honey, melted
- 1 pinch onion powder
- ⅛ teaspoons sea salt, plus more to taste
Instructions
- In a small bowl whisk together the poppy seed dressing ingrediants until well combined. Taste and adjust flavor as needed, adding more lemon juice for brightness/acidity, honey for sweetness, or salt for flavor balance. Set aside.
- Add arugula and romaine to a large salad bowl along with chickpeas, berries, avocado, nuts, and seeds. Add dressing and gently toss!
