
Spaghetti and Meatballs

Meatballs:
- 1 pound grass-fed, grass-finished ground beef, I use 80/20
- 2 flax eggs, 2 tablespoons ground flaxseeds + 6 tablespoons water
- 2 tablespoons nutritional yeast
- 1 teaspoon garlic salt
- ½ teaspoon onion powder
- 2 teaspoons fresh oregano, or ¾ teaspoon dry
- 2 tablespoons fresh parsley, chopped or 1 teaspoon dry
- 6 tablespoons almond flour
- 1 teaspoon sea salt, plus more to taste
- ½ teaspoon black pepper, plus more if needed
- 2 tablespoons olive oil
Marinara Sauce:
- 2 tablespoons olive oil
- ½ onion, chopped
- 5 cloves of garlic, minced
- 2 dry bay leaves
- 4 ½ cups crushed tomatoes, I used Jovial crushed tomatoes
- 1 tablespoon fresh oregano, or 1 teaspoon dry
- 1 tablespoon fresh parsley, or 1 teaspoon dry
- ½ cup fresh basil, chopped
- ¼ teaspoon red pepper flakes
- 1 teaspoon sea salt, plus more to taste
- ½ teaspoon black pepper
Instructions
- In a mixing bowl prepare flax egg and let sit for 10 minutes to thicken. Once thickened add ground beef, nutritional yeast, all herbs and spices.
- Before adding almond flour add a little water to it so it can become mushy (this helps keep the meatballs tender). Use your hand and mix the mixture together until evenly combined.
- Using tablespoon, scoop out mixture and gently roll into balls. ( You may need to wet your hands with water to prevent the mixture from sticking.)
- Heat olive oil in a large sauce pan or dutch oven over medium-high heat.
- Once hot add meatballs in batches without crowding the pan, and sauté meatballs until browned on all sides. Remove meatballs and set aside.
Sauce:
- In the same pan remove excess oil. Add 1 tablespoon olive oil and onions. Sauté for 4-5 minutes until onions are tender then add garlic and cook for an additional minute.
- Pour in crushed tomatoes. Use a wooden spoon to scape the brown bits from the bottom of the pan.
- Add spices and meatballs and simmer for 30 minutes, stirring occasionally.
- Taste and adjust flavor as needed and server over spaghetti and top with fresh basil and nutritional yeast.
