Cauliflower Walnut Taco Meat Bowls

Ingredients
Scale
- 1 package tortillas, I used Siete grain-free tortillas
- 1 head of cauliflower
- 1 cup raw walnuts
- ½ onion, chopped
- 2 cloves of garlic, minced
- 1 handful of fresh cilantro
Taco Seasoning
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ teaspoon oregano
- ½ teaspoon onion powder
- ¼ teaspoon sea salt
- ¼ teaspoon black pepper
- ¼ teaspoon red pepper flakes
- 1 tablespoon nutritional yeast
Toppings
- 1 head of romaine lettuce, thinly shredded
- ½ cup cherry tomatoes, halved
- 1-2 ears of corn, shucked and corn kernels sliced off the cob
- ½ can black beans, rinsed and drained
- 1 avocado, diced
- ½ red bell pepper, chopped
- 1 handful of fresh cilantro
Instructions
- Preheat oven to 400 degrees F and line a baking sheet with parchment paper.
- In a food processor add cauliflower, walnuts, onion, garlic and 2 tbsp of taco seasoning. Blend until mixture is evenly ground and forms similar to ground meat. Trasnfer to prepared baking sheet and spread mixture out evenly. Drizzle with avocado oil and bake for 25 minutes, stirring halfway.
Tortilla Bowls
- While cauliflower is baking prepare taco towls. In a small pan heat each tortilla on each side until warm. Lightly press each tortilla into muffins tin and bake for 12-15 minutes. Add taco meat, toppings and enjoy!
Notes
Store taco seasoning in a jar for up to 6 months. If you don't want to make homemade taco seasoning I recommend using Siete Foods Mild Taco Seasoning!
If you don't have a food processor you can finely chop the cauliflower, walnuts, onions and garlic.
