Prepare pudding according to package instructions and set aside.
Preheat oven to 350 degrees F and line a 8x8 baking dish with parchment paper.
In a large bowl prepare flax egg- mix 1 tbsp ground flax + 3 tbsp water together and let sit for 10 minutes to thicken.
Add coconut oil, maple syrup, cashew butter and vanilla extract. Mix well, then stir in dry ingredients- almond flour, cocoa powder, arrowroot, collagen, baking soda, baking powder, and salt. Mix well, then pour batter into prepared baking dish. Use a silicone spatula spread batter out evenly.
Bake for 12-15 minutes and allow brownie to cool completely before assembling!
