Ingredients

Scale
  • 1 pound organic chicken breast, cut into bite size pieces
  • 1 red bell pepper, sliced
  • Half of an onion, sliced
  • 2 tablespoon avocado oil, or extra-virgin olive oil
  • 1 tablespoon black sesame seeds, optional

Orange Sauce

  • Zest of an orange
  • 1-2 oranges, juiced (about 1/3 cup)
  • 2½ tablespoons coconut aminos (soy sauce alternative)
  • 2 tablespoons rice vinegar
  • 1 tablespoon water
  • 1 teaspoon toasted sesame oil
  • 2 cloves of garlic, minced
  • 1 ½ teaspoon fresh ginger, grated
  • 2 tablespoons raw honey, melted
  • 1 tablespoon arrowroot powder (cornstarch alternative)
  • 1/4 teaspoon red pepper flakes, add more for additional spice

Instructions

  1. In a small bowl whisk together the Orange Sauce ingredients until well combined. Set aside.
  2. In a large skillet heat avocado oil over medium-high heat. Pat dry your chicken then add in your chicken pieces.
  3. Spread them out evenly so the chicken can brown. Cook for 8-10 minutes until cooked through. Remove from skillet and set aside.
  4. In the same hot skillet add red pepper and onion. Sauté until crisp-tender, about 3-5 minutes. (Add 1 tablespoon of water or bone broth into the hot skillet to help steam the vegetables faster).
  5. Add the cooked chicken back into the skillet and reduce heat to low.
  6. Give your Orange Sauce another whisk and pour it into the skillet. Stir and simmer for 1-2 minutes or until sauce starts to bubble and thicken. Top with black sesame seeds and serve with white or brown rice.
